Carole Zermatten (Switzerland/Singapore) is a Food Science student who joined Singapore-ETH Centre for her Master thesis. Her research focuses on microalgae cultivation to develop urban food production systems. Microalage are unicellular organisms containing healthful proteins and omega-3 fatty acids which can be grown in bioreactors with little arable land low carbon footprint. In her work, she explores and compares gentle permeabilisation techniques to open up the cells and extract their valuable components in order to fully benefit from microalgae nutritional potential.
